Located in the Hyatt Regency, Azure looks the part with roomy dining spaces appointed with inoffensive decor and lighting. The kitchen can be seen and its sizzles heard from the tables, the chef directing his staff in soft but imperious Spanish. Go for the cold appetisers, ceviches and octopus are highlights. The seafood is fresh and allowed to express its subtle flavours and textures without being overpowered by sauces and seasoning as is all too common in Riyadh. The main reason one visits a Spanish eatery is for its pork and seafood. In lieu of the former, the paella shines. There’s no question, the seafood paella is really the only choice. For ponces of paella, know the chef likes to cook the specially imported paella rice soft (specify if you want a crispy bottom). While it would comfortably settle for a neighbourhood favourite in its native southern Iberian towns and villages, in Riyadh, Azure reigns king. The best Spanish joint in town with little doubt.
